Chef Ashley Palmer-Watts creates Mocha Tart for Fuller’s pubs


Ashley Palmer-Watts, former chef director of The Fat Duck and Dinner by Heston and co-founder of Artisan Coffee Co., has created a delicious Chocolate Mocha Tart which will soon feature on the menus of over 100 Fuller’s pubs.

Fuller’s been a sponsor of the Bocuse d’Or UK Academy since October 2019.  As part of the partnership, Fuller’s agreed to incorporate dishes created by Bocuse d'Or UK chefs and have them feature on the pub’s menus with a donation from each dish sold going towards Bocuse d’Or UK team. 


Ashley Palmer-Watts is a chef ambassador for the Bocuse d’Or UK Academy and is the second chef to create a bespoke dish for Fuller’s, following on from Simon Rogan’s Shepherd’s Pie, with more seasonal dishes sold in support of the Bocuse d’Or to be added throughout the year. While Ashley has developed a detailed recipe using his expertise along with the finest ingredients, the tarts will be made in house – from scratch – by the pubs’ chefs.


The mocha tart is the ultimate end to any occasion – a chocolate crumble base and unctuous deep rich chocolate ganache, showcasing The Big Shot espresso which adds depth and complexity to the dessert. Artisan Coffee Co. pushes the boundaries by adopting a meticulously scientific approach to taste and flavour. The tart will be served with chocolate crumble and buffalo milk vanilla ice cream.
