As we head into autumn, we have seven new dishes making their way onto menus in Fuller’s pubs. Each new dish combines new seasonal produce and rich, vibrant flavours and we can’t wait for you to give them a try.
Although there’s nothing quite like a crispy crab burger or refreshing summer salad in a pub garden with a chilled bottle of wine, we’ll never turn down a cosy evening indoors with fresh fish or a hearty meat dish, topped off with a generous dessert.
Fuller’s Kitchen is a sub-brand of Fuller’s that’s responsible for the talented chefs and food offering in 200 of Fuller’s managed pubs. Each pub with a Fuller’s Kitchenuses seasonal ingredients sourced from Fuller’s hand-picked British suppliers, which are delivered fresh to the pubs each day. Fuller’s chefs then have the freedom to put their own stamp on every dish, which is why you will see the head chef's signature dish on every menu.
Here's a taste of some of the delicious new dishes you can tuck into this Autumn...
We've gone mad for mussels
British mussels are at their most succulent and plentiful in the chilly autumn and winter months which is why they are the star of the show in three brand new dishes.
If you’re in the mood for a big bowl of fresh mussels, choose the mussels with Amontillado sherry, piquillo peppers, Parma ham and parley. This vibrant and flavoursome dish would work both as a main course or starter dish to tantalise your tastebuds.
If you’re looking for something to warm you up on a cooler evening, the charred sweetcorn and mussel chowder is a comforting dish and the fresh mussels give a beautiful depth of flavour. Or a lighter option is the crispy mussels and citrus salad, accompanied by a saffron and vermouth mayonnaise.
The best of British beef
Beef cheeks are another key ingredient, featuring on three new dishes for autumn. Beef cheeks can be a tough cut of meat but when it’s cooked long and slow, it absorbs the flavours of the braising liquid and flakes away, almost like pulled pork.
If you’re in the mood for something rich and hearty, the beef cheek and mushroom cobbler is for you. The tender beef is stewed in London Pride and topped with stilton cheese scones, paired with fresh hispi cabbage. Alternatively, there is also a beef cheek braised in London Pride, served with potato puree, seasonal greens and pickled shallot rings.
The third new beef dish is chipotle chilli beef cheek tacos served with crema, pickled carrots, chilli and lime. This makes for a fresher and lighter beef dish, ideal for a quick lunch or if you’re sharing some small plates.
Tantalising Teriyaki Salmon
If you love Teriyaki and Asian flavours, then the Teriyaki salmon Udon noodle bowl is for you. This lighter dish really packs a punch and is the perfect choice as we transition from summer into autumn. It’s served with pak choi, mango and corn salsa, miso dressing and sesame seeds which add to the explosion of flavour.
