Fuller’s creates vegan puddings with MasterChef’s Alexandra Talbot

MasterChef semi-finalist Alexandra Talbot has teamed-up with two of Fuller’s talented head chefs to create new vegan puddings to feature on the menu at selected Fuller’s pubs for a limited time.  

Alexendra was recently a semi-finalist on the 2019 series of MasterChef where she was highly praised by Michelin Star Chef Alexis Gauthier on the programme for her vegan silken tofu Panna Cotta dessert – which he described as being "the future of food".

Alexandra collaborated with Fuller’s Head Chefs, Jamie Stone of The Holly Bush in Hampstead and David Green of The White Hart in Stockbridge, to create nine new vegan puddings to feature on their menus.

Alexandra said: “I am delighted to be working with Fuller’s on developing vegan dishes for some of its pubs’ menus. Some people are afraid of veganism as it appears quite limited, but I think what Fuller’s and I have done as a team is create well-loved, well-known dishes that are suitable for all, with no limitations.

“The vegan movement is now very strong, with many individuals choosing to have a meat-free eating day a week. I have been a pescatarian for almost 30 years and remember how hard it was to find something on a menu when I went out. I think we all have a responsibility to give people choice and food needs to be interesting and accessible to anyone, whether you eat meat or not.”

Jamie Stone, Head Chef of The Holly Bush in Hampstead, said: 


“For me, creating plant-based dishes is one of my main focuses – I’ve spent the past few months creating more vegan options for my restaurant menu and incorporating this into my own life as well, so it was great to have the opportunity to collaborate with Alexandra and David. 

“The aim was to create more vegan dessert options at Fuller’s, so all three of us came up with vegan dessert recipes, which we then made and developed together at the Newlands Cookery School in Hampshire on 18 March.”

The result was a total of nine completely plant-based puddings, which included:

Salted Chocolate Fondant
Raspberry Cashew Mousse
Lime and Coconut Panna Cotta with a Coconut Crumb
Strawberry Trifle
Raspberry Millefeuille
Cardamom, Vanilla and Blood Orange Rice Pudding
Jaffa Cake
Salted Caramel and Apple Strudel with Creme Anglaise
Millionaire Shortbread with Raspberry and Coconut Sorbet

Taste the Vegan pudding creations  

The vegan puddings will be available as chef signature specials at The Holly Bush and The White Hart for the next six to eight weeks, with all Fuller’s Kitchens having the opportunity to feature the special puddings on their own menus if they choose to.
