How to brew a pint of London Pride - Part 2: Fermentation

The beer making process is both a science and an artform and has been the speciality of The Griffin Brewery for more than 175 years. 

There’s nothing better than a fresh pint of cask ale from a barrel that’s been lovingly brewed and cared for. The team at the brewery have been working on a fresh batch of London Pride and it's now at the fermentation stage.


This is the part where we sit back and wait...

Brewing a fantastic cask ale is all about patience and passion. Since you signed up to Adopt a Pint, your pint of London Pride has been brewing and now Fuller’s unique yeast strain is doing its job. This is a vital stage that makes a pint of London Pride such a joy to drink. 


The yeast is what gives Fuller's beers that rounded, full and delicious flavour everyone loves and hopefully enjoying even more of during our month of Fresh Beer Served Here campaign.

While the beer is in the brewery's fermentation vessels, the yeast eats the sugars in the ‘wort’ - the sugary liquid created is when malted barley is steeped in warm water (see our previous blog post for a reminder of how far your beer has come).

This process produces alcohol and carbon dioxide. It also creates that wonderful flavour and gives a pint of ale a lovely rounded mouth-feel. In short, it’s where the magic happens.


The ale is left alone to ferment – after all, beer has been going through this process for thousands of years and knows what it’s doing. The brewers must keep a close eye on it's progress so they can pinpoint the moment when it’s fermented to perfection.

As well as a science, brewing is an art, and no two processes are exactly the same – which is why brewers are brimming with skill and passion for the perfect pint.
