BII
We encourage you to join the BII, the professional body for the licensed retail sector, and take advantage of courses offered through your local region. We will subsidise your first year’s membership costs.
The following courses are available from Fuller's and are designed to help you comply with current legislation and continually develop your personal and business skills and can be booked through your business development manager or the training department. We will insist you sit the first five when you join the Company but you can, if you wish, book any of those listed. Most courses (unless stated) are also available for key members of your staff wishing to develop new skills.
National Certificate for Personal Licence Holders (Cost £100)
This is the certificate required by all local authorities before granting a personal licence. If you do not already hold a personal licence, don't worry as we will arrange for you to sit one of the regular courses held at Fuller’s.
Basic Food Hygiene (Cost £75)
A course for everyone who works in or supervises the catering part of the business and a must for all would be tenants and lessees. Again we hold these courses regularly and it will provide you with the minimum standard of understanding in respect of good hygiene practices. The exam is certificated by the Royal Institute of Public Health and Hygiene.
Fuller’s Cellar Management Course (Cost Free)
This course is essential to anyone taking a Fuller's pub and must be sat within two months of taking one of our pubs. The course is a full day covering cask beer management and dispense, manual handling and the health and safety implications of working in a cellar environment. On passing you will be awarded the BIIAB Award In Cellar Quality. Also included in the day is an introduction to the extensive range of wines available from Fuller’s.

Fuller's Finance Course (£50)
We have introduced a policy of open book accounting at Fuller's. This means your accountant will be required to help you set up the business and provide monthly and annual accounts. You will also need to have regular stocktakes to make sure the business is on the right track. Your accountant will be asked to sign up to a scheme which informs Fuller's if your business runs into difficulties particularly in the first year. The course will introduce you to the minimum bookwork and record keeping you will be required to keep to assist the accountant in preparing these figures, plus the benefits of regular stocktaking.
Fuller's Marketing Course (£200 for two days - £300 per couple if sharing a room)
An introduction to the basic marketing requirements that will assist you in making sure you target your customer market place. It will also help you with the marketing of products available from Fuller's and outside suppliers.
Employment Law (Cost £50)
With ever-changing and complex employment laws, this course offers an overview and insight into employing people legally.
Foundation Food (Cost £50)
A one day starter course for junior chefs, kitchen assistants, kitchen porters and all food handlers covering all the necessary basic food procedures, safety skills and basic paperwork.
Practical Catering (Cost £50)
A one day certified course for more experienced chefs, tenants and lessees, who wish to improve their food knowledge concentrating on flavour, tastes and customer expectations. During the day you will cover working procedures, dish construction, food combinations and all the financial aspects of pricing dishes.
Advanced Practical Catering (Cost £50)
A course for chefs, tenants and lessees wishing to improve their food knowledge. Covering the finer points of method cookery (including grilling meat, seasoning, deep fat frying and garnishing). Content also includes dish construction, setting up ready for service, stocktaking, prepping and ordering stock, and the effective use of utilities in the kitchen.

Chef Development Programme (Cost £350)
A series of eight training days, which build on one another followed by a passing out day and dinner. This specialised programme runs twice a year and requires your business development manager to nominate you. The eight modules are as follows:
1. Today's market place food
2. Science of food
3. Ethnic cookery
4. Introduction to team leading
5. Cooking for special diets
6. Desserts
7. Events calendar
8. Basket of ingredients exercise.
Health & Safety (Cost £75)
An overview of health and safety in the pub. The course will cover risk assessment and the powers of the Health and Safety Executive.
ARAR (Award in Responsible Retailing) (Cost £50)
A one day course designed for those who do not need to sit the NCPLH (National Certificate for Personal Licence Holders), but would like to improve theire awareness of the current licensing laws and practices.
First Aid (Cost £75)
A basic first aid programme covering unconscious casualties, airway and breathing difficulties and attending to wounds.
We can also assist in providing one day courses on subjects such as training skills, coaching skills, team building, leadership and motivation.
